30 Nov OUR MEAL LAST NIGHT: Basic Yummy Rice & Tofu – One of my faves – Oh, and salad.
At least once a week, I make rice. It’s the perfect addition to any meal, and it can be transformed into SO many things..from a basic stir fry to a cheesy casserole dish. K. Below is my basic yummy rice recipe. Though I don’t think it’s really mine.Recipe: 1.5 cups brown rice 4 cups chicken broth
Next, TOFU. I know so many people, gf included, who don’t like tofu. I say it’s because they’ve never had tofu cooked well. I could be wrong. I’ll rephrase that, I’m probably wrong. But here’s my recipe anyway…for those who do like tofu, and those who haven’t before, but feel like being bold and trying again..TOFU recipe: Firm or extra firm tofu (I’ve been buy Trader Joes Sprouted tofu – It’s good) olive oil OR even better COCONUT OIL Soy sauce Nutritional yeast How to: Cut TOFU into pieces, however you like (squares, rectangles, circles, etc.) Drop into hot skillet with oil. Coconut oil makes for a delicious outcome! Once browned on both sides, add soy sauce. Remove from heat, and add a couple tablespoons of nutritional yeast. (Nutritional Yeast Rocks! It’s good on everything – kind of tastes like cheese.)
Now for the SALAD! So easy, and SO yum.SALAD Recipe: Romaine lettuce (I used 1 organic bag from Trader Joes) 1-2 pears, cut into pieces Feta Cheese – the saltier the better A teensy olive oil to drizzle Even less balsamic vinegar (half of oil) Salt (only if feta isn’t salty enough)
Shake ALL ingredients hard…till it looks delish. Then eat.
Pretty soon you plate will look like this: (Actually, this is my son’s plate just a few minutes in.. he ROCKS. Loves tofu, loves, rice, and tolerates salad.) LOVE my son-shine!
